On Sunday we had some lovely ladies over to carve and celebrate the beauty and yumminess of pumpkins.

All the treats and eats enjoyed before carving came from the Italian Market.

None of the left over bits where thrown out. The heaps of collected seeds were pan roasted with a bit of salt.

Then JC grilled up pumpkin pieces, which we had cut out to make our designs, on the BBQ and created a beautiful salad. With some of the other bits he made pumpkin cream based pasta garnished with sage.

The next day he whipped together a batch of pumpkin pancakes. (No photos of them, I ate them up too fast, Sorry, Not sorry) For these he used the stringy bits that we pulled out. He steamed them for 20 minutes and puréed them until it had the constancy of canned pumpkin.

Falling in Love with Apples

Last week we went apple picking in our front yard. We only took the ones we could reach but still ended up with a good size bag.

Then the apple crafts started!

First I cut a bunch up and tossed them in cinnamon. I was so excited to try out the new food dehydrator we bought! I filled it up and put them on for 8 hours at 135 F and soon the room smelled of sweet cinnamon.

After that we still had so many left so JC made Pie! So many pies, we ended up freezing them.

And of course I had apples for snacks the rest of the week. Yummy!

DIY Tacos in a Bag

Tacos in a Bag is one of my favorite festival foods! Throughout the summer I search every food truck looking for this special menu item. I have forked out 5 to 9 dollars for one of these delicious delights. This summer I only managed to find them once. Once! Then JC said a magical statement, “Why don’t we just make them at home” – Duh!

These are easy peasy, all you need is; salsa, sour cream (We used plain yogurt), lettuce, shredded cheddar cheese, diced tomatoes, pan fried ground beef with spices and a Halloween sized bag of Doritos chips.

Directions – Squish bag of chips, open the bag, and add in all the things!
